To beat the heat, we love this recipe that doesn’t have us slaving over a hot stove all day. Paleo chili mayo adds a little spice to our life, while the layers of rice, shrimp, and avocado are a cool treat for a hot day.

Time: 30 minutes
Gluten Free, Dairy Free

Ingredients

1 cup cauliflower rice
1 tablespoon sesame oil
1 cup avocado, diced
1 tablespoon cilantro, finely chopped
1 cup cooked shrimp (peeled, tails removed, coarsely chopped)
1 tablespoon gluten-free soy sauce
⅓ cup mayonnaise
2 teaspoons hot chili sauce
1 cup cucumber, peeled and diced
1 tablespoon sesame seeds
Salt and pepper to taste

Instructions

Use a food processor or blender on pulse to finely chop the cauliflower florets.In a small bowl, mix the cauliflower rice and sesame oil.

In a second bowl, mash the avocado. Add the cilantro.

Combine the shrimp and soy sauce in a separate bowl—toss until shrimp is well coated.

In a fourth bowl, stir together the mayonnaise and hot chili sauce.

Using a 1-cup measuring cup, assemble the tower. Fill the cup ¼ of the way with diced cucumber, followed by ¼ cup of the avocado mixture, ¼ cup coated shrimp, and finally ¼ cup cauliflower rice. Apply slight pressure to level.

Place a plate on top of the measuring cup. Flip it upside-down. If the tower sticks to the cup, tap the bottom of the cup gently.

Garnish with a dollop of the spicy mayonnaise mixture and a sprinkle with sesame seeds. Salt and pepper to taste.
